Shellfish (shrimp)

Ingredients

  • 12 large shrimp, peeled and deveined
  • 6 slices of bacon
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • Lemon wedges for serving (optional)

Instructions

  1. Prepare the bacon by cutting each slice in half, creating 2 pieces of bacon per slice. Set aside.
  2. In a small bowl, mix together parsley, basil, dill, garlic, lemon juice, salt, and pepper to create the herb sauce. Set aside.
  3. Gently heat olive oil in a pan over low heat. Add the shrimp and cook for 1 2 minutes on each side until just pink. Remove from pan and let cool slightly.
  4. Wrap each shrimp with a piece of bacon, securing with a toothpick if necessary.
  5. Heat a grill or grill pan to medium high heat. Grill the bacon wrapped shrimp for 2 3 minutes per side until the bacon is crispy and the shrimp are fully cooked.
  6. Serve hot, drizzled with herb sauce and lemon wedges on the side if desired.
