a. In a large bowl, whisk together the flour, quark cheese, sugar, baking powder, and salt. b. In a separate bowl, beat the egg yolks and milk together until well combined. Pour this mixture into the dry ingredients and mix until just incorporated. c. In another bowl, beat the egg whites until stiff peaks form. Fold them gently into the batter. d. Preheat a non stick griddle or pan over medium heat. Drop 1 tablespoon of batter for each blini onto the griddle and cook until bubbles appear on the surface and the edges are golden, about 1 2 minutes per side. Repeat with the remaining batter. e. In a small saucepan, combine the lemon juice, lemon zest, heavy cream, butter, and a pinch of salt. Heat gently until the butter melts and the sauce thickens slightly. Season with freshly ground black pepper to taste. f. To assemble, spread a dollop of lemon cream sauce on each blini, top with smoked salmon slices, sprinkle with chopped dill, and season with additional black pepper if desired.
