  • 2 tbsp olive oil

  • 2 tbsp fresh dill, chopped

Instructions

  1. In a large mixing bowl, whisk together almond flour, eggs, coconut milk, olive oil, baking powder, salt, and pepper until well combined.
  2. Preheat a non stick pan over medium heat. Pour 1/4 cup of the batter into the pan and cook for 2 3 minutes on each side, or until golden brown. Repeat with remaining batter.
  3. In a small bowl, combine sour cream (or coconut cream), dill, lemon juice, salt, and pepper to make the dill sauce.
  4. To assemble the dish, place two blini on each plate, layer smoked salmon on top, and drizzle with dill sauce. Garnish with fresh chives.
