Instructions

  2. In a large mixing bowl, combine ground meat, onion, garlic, bread without crust (soaked in milk and squeezed dry), raisins, apricot jam, egg, curry powder, salt, and pepper. Mix well to combine all ingredients.
  3. Transfer the mixture into the prepared baking dish, spreading evenly. Bake for 30 35 minutes, or until cooked through.
  4. While the Bobotie is baking, prepare the Malva Pudding by whisking together flour, sugar, egg, milk, vinegar, butter, and vanilla extract in a large bowl until smooth. Stir in apricot jam.
  5. Pour the Malva Pudding mixture over the cooked Bobotie in the baking dish. Bake for an additional 40 45 minutes or until a toothpick inserted into the pudding comes out clean.
  6. Remove from oven and allow to cool slightly before serving with custard sauce.
