  • 8 oz crumbled feta cheese
  • 2 large eggs
  • 3 cups all
  • purpose flour
  • 2 teaspoons instant yeast

Instructions

  1. In a large bowl, combine spinach and feta cheese. Mix well.
  2. Beat eggs in a separate bowl and add to the spinach mixture. Season with salt and pepper.
  3. In another bowl, mix flour and instant yeast. Gradually add warm water and olive oil, stirring until a soft dough forms. Knead for about 10 minutes or until smooth and elastic.
  4. Divide dough into four equal portions. Roll each portion into a thin round shape.
  5. Spread spinach mixture evenly on two of the dough rounds, leaving a border around the edges. Carefully fold in the sides and roll up to enclose the filling completely. Seal the edges well.
  6. Place stuffed dough rounds onto parchment lined baking sheets, seam side down. Cover and let rise for 30 minutes.
  7. Preheat oven to 425°F (220°C). Brush the tops of the pides with a beaten egg and sprinkle sesame seeds on top if desired.
  8. Bake in preheated oven for 18 20 minutes or until golden brown. Let cool slightly before slicing.
