Ingredients

  • 1 cup Jasmine rice, rinsed and drained
  • 4 cups water or vegetable broth
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1/2 cup firm tofu, crumbled
  • 1/2 cup shiitake mushrooms, sliced
  • 1 cup mixed vegetables (carrots, bell peppers, zucchini), diced
  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese black vinegar
  • Freshly ground black pepper, to taste
  • Chopped green onions and cilantro, for garnish

Instructions

  1. In a medium saucepan, combine the rinsed and drained Jasmine rice with water or vegetable broth. Bring it to a boil over high heat, then reduce the heat to low and simmer until the rice is fully cooked and the liquid has been absorbed. Stir occasionally to prevent sticking.
  2. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 4 minutes.
  3. Add the crumbled tofu to the skillet with the onions, stirring occasionally, and cook for 5 minutes or until it starts to brown.
  4. Stir in the sliced shiitake mushrooms and diced mixed vegetables, and continue to sauté for another 5 7 minutes, or until the vegetables are tender but still have a slight crunch.
  5. Season the mixture with soy sauce, Chinese black vinegar, and freshly ground black pepper, to taste. Remove from heat.
  6. Once the rice is fully cooked, fluff it with a fork and stir in salt to taste. Then, serve the congee into two bowls, top each with the tofu scramble and sautéed vegetables. Garnish with chopped green onions and cilantro before serving.
