1/4 cup chickpea flour
3/4 cup unsweetened almond milk
1/4 cup nutritional yeast
1 tablespoon olive oil
1 teaspoon sea salt

1/2 teaspoon onion powder
1 cup fresh spinach, chopped
1 cup sliced mushrooms
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh chives, finely chopped

Instructions
Prepare the quiche crust by combining almond flour, chickpea flour, almond milk, nutritional yeast, olive oil, sea salt, ground black pepper, garlic powder, and onion powder in a mixing bowl. Mix well until you achieve a smooth batter consistency. Set aside for 10 minutes to rest.
Preheat your oven to 350°F (180°C). Grease a 9 inch pie dish and pour the quiche crust batter into it, spreading evenly with a spatula. Bake for 15 minutes or until golden brown. Remove from the oven and let it cool slightly.
In a pan over medium heat, sauté sliced mushrooms in a small amount of olive oil until tender. Add chopped spinach and cook until wilted. Stir in finely chopped parsley and chives. Season with salt and pepper to taste. Remove from heat and let it cool slightly.
Spoon the mushroom and spinach mixture onto the partially baked quiche crust, distributing it evenly. Bake for another 25 minutes or until the filling is set and golden brown.
While the quiche is baking, warm crepes in a dry pan over low heat for about a minute on each side. Fill them with your favorite vegan spreads or sweet fillings like fruit preserves or dairy free whipped cream.
