Ingredients

  • 1 cup chickpeas, cooked
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, peeled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/3 cup chickpea flour
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • Salt and pepper, to taste
  • Oil for frying Tahini Sauce:
  • 1/4 cup tahini paste
  • 3 tablespoons lemon juice
  • 2 tablespoons water
  • 1 garlic clove, minced
  • Salt, to taste

Instructions

  1. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, and mint. Process until well combined and slightly chunky.
  2. Add chickpea flour, cumin, coriander, baking powder, salt, and pepper to the mixture. Pulse until the dough starts to come together.
  3. Shape the falafel dough into small, round balls and flatten them slightly.
  4. In a frying pan, heat about an inch of oil over medium high heat. Carefully drop the falafel bites into the hot oil and fry until golden brown on both sides, around 3 4 minutes per side. Remove from the oil and place on paper towels to drain any excess oil.
  5. To prepare the tahini sauce, whisk together tahini paste, lemon juice, water, garlic, and salt in a small bowl until smooth and creamy.
  6. Serve falafel bites warm with tahini sauce on the side.
