Instructions
In a food processor, combine chickpeas and nutritional yeast. Process until you have a scrambled egg like consistency. Season with salt and pepper to taste. Set aside.
Heat olive oil in a large non stick skillet over medium heat. Add onion and bell peppers, sautéing for 5 minutes or until tender.
Add chickpea mixture to the skillet with vegetables, stirring frequently to avoid sticking. Cook for about 8 minutes or until desired texture is achieved.
Fold in spinach leaves and cook until wilted.
Serve in bowls, topped with shredded vegan cheddar cheese, parsley, and chives.
