  • 2 boneless, skinless chicken breasts
  • 2 tbsp coconut oil
  • 1 tbsp ground cumin

  • 2 cups mixed vegetables (carrots, zucchini, bell peppers, cherry tomatoes)
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (205°C). In a small bowl, mix cumin, smoked paprika, garlic powder, onion powder, ground ginger, salt, and pepper. Rub the spice mixture onto the chicken breasts and set aside.
  2. In an oven safe skillet, heat 1 tbsp of coconut oil over medium heat. Add the seasoned chicken breasts and cook for 3 4 minutes on each side or until golden brown. Transfer the skillet to the preheated oven and bake for 15 20 minutes or until cooked through. Remove from oven and let rest for a few minutes before slicing.
  3. In another small bowl, combine coconut milk and chicken broth. In a medium saucepan, bring the mixture to a boil over high heat. Add jasmine rice, reduce heat to low, cover, and simmer for 18 20 minutes or until the liquid is absorbed and the rice is tender.
  4. Toss mixed vegetables in olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and roast in the preheated oven for 20 25 minutes or until tender and slightly caramelized.
