  • 1 cup heavy cream
  • 1 tsp pure vanilla extract
  • 4 sheets filo pastry
  • 3 tbsp unsalted butter, melted
  • Confectioners' sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Gently simmer cloudberries and sugar in a saucepan until tender, about 5 minutes. Set aside to cool.
  3. In a separate bowl, whip heavy cream and vanilla extract until soft peaks form.
  4. Lay out one sheet of filo pastry on the prepared baking sheet. Brush with melted butter and repeat for the remaining three sheets, creating a stack.
  5. Bake the filo stack for 7 10 minutes or until golden brown and crispy. Allow to cool slightly before breaking into two equal portions.
  6. Assemble dessert by spreading whipped cream on one portion of the pastry stack, then layering with cloudberries. Top with remaining pastry sheet, pressing down gently.
  7. Dust with confectioners' sugar and serve immediately.
