  • 1 package puff pastry sheets (defrosted)
  • 2 cups mixed Nordic berries (fresh or frozen)
  • 3 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 1/2 cup whipped cream
  • 1 tbsp lemon zest
  • 1/4 tsp ground cardamom

Instructions

  1. Preheat oven to 375°F (190°C).
  2. On a lightly floured surface, roll out each puff pastry sheet into a rectangle shape.
  3. Transfer one rolled out sheet onto a lined baking sheet, and prick it all over with a fork. Repeat for the second sheet.
  4. Bake in the preheated oven for 10 12 minutes, or until golden brown and puffed. Remove from the oven and let cool completely on a wire rack.
  5. In a saucepan, combine berries, sugar, cornstarch, and cardamom. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  6. Remove from heat, stir in lemon zest, and let cool completely.
  7. To assemble, place one cooled pastry sheet on a serving plate. Spread whipped cream evenly over it. Top with the cooled berry mixture and gently lay the second pastry sheet on top. Cut into portions and serve.
