Ingredients
4 oz salmon fillet
1 cup cauliflower rice
2 cups spinach
1/2 cup cherry tomatoes, halved
1 avocado, sliced
1 tbsp capers
1 tbsp fresh dill, chopped
1 tbsp fresh parsley, chopped
1 lemon, zested and juiced
2 tbsp olive oil
Salt and pepper, to taste
Instructions
Season the salmon fillet with salt and pepper, and place it on a greased baking sheet. Bake in the oven at 400°F for 12 15 minutes or until cooked through.
In a pan over medium heat, sauté the cauliflower rice for 5 7 minutes until slightly golden. Season with salt and pepper to taste.
In a separate pan, add spinach and cherry tomatoes, cooking until just wilted. Season with salt and pepper.
Arrange the cooked salmon on top of the sautéed vegetables. Top with avocado slices, capers, dill, parsley, lemon zest, lemon juice, and olive oil.
