  • purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup mixed Nordic forest berries (blueberries, raspberries, and blackberries)
  • 2 tablespoons honey
  • 1 teaspoon dried lavender flowers
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Press the mixture into 4 mini tartlet pans.
  3. Bake the crusts for 15 20 minutes or until golden brown. Remove from oven and let cool.

  5. Bake for another 18 23 minutes or until the filling is set but still slightly wobbly in the center. Let cool completely.
  6. In a small saucepan, combine berries and honey. Cook over medium heat until the berries release their juices and become soft. Remove from heat and stir in lavender flowers.
  7. Drizzle the berry mixture over each tartlet. If desired, dust with powdered sugar before serving.
