Ingredients
- 1. Fresh blueberries
- 2 cups 2. Coconut cream
- 1 can (13.5 oz) 3. Cashew milk
- 1 cup 4. Agave syrup
- 1/2 cup 5. Lemon juice
- 2 tbsp 6. Vanilla extract
- 1 tsp 7. Pistachios, finely chopped
- 1/2 cup 8. Mint leaves, for garnish
Instructions
- In a blender, combine the blueberries, coconut cream, cashew milk, agave syrup, lemon juice, and vanilla extract until smooth.
- Pour the mixture into a shallow dish and freeze until solid, at least 4 hours or overnight.
- Once frozen, use a round cookie cutter to create perfect circles of the blueberry blend.
- Top each circle with a sprinkle of chopped pistachios and a mint leaf for a touch of elegance.
- Serve immediately.
