Ingredients

  • 1 salmon fillet (6 oz)
  • 1 cup cauliflower rice
  • 1/2 cup cherry tomatoes
  • 1/2 cup arugula
  • 1/4 cup avocado, sliced
  • 2 tbsp capers
  • 1/2 lemon, zested and juiced
  • 2 tbsp extra virgin olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the salmon fillet with salt and pepper to taste.
  2. Heat 1 tablespoon of olive oil in a non stick pan over medium heat.
  3. Add the salmon and cook for 4 minutes per side or until cooked through. Remove from the pan and set aside.
  4. In the same pan, add another tablespoon of olive oil and sauté the cauliflower rice for 5 7 minutes or until golden brown. Season with salt and pepper to taste.
  5. Assemble the bowl: place the cauliflower rice at the bottom, followed by arugula, salmon, cherry tomatoes, avocado, and capers.
  6. Drizzle with lemon zest, lemon juice, and remaining olive oil for an extra burst of flavor.
