  • 100g shrimp, peeled and deveined 100g scallops, washed and patted dry 200g salmon fillet, skin removed and cut into cubes 1 cup fresh dill, finely chopped 1 cup heavy cream 1 lemon, zested and juiced Salt and pepper, to taste Olive oil

  1. a. In a large pan over medium heat, add a drizzle of olive oil. b. Season the shrimp, scallops, and salmon with salt and pepper, then add them to the pan. Cook for 2 3 minutes on each side until cooked through. c. Remove the seafood from the pan and set aside, keeping them warm. d. In the same pan, add the heavy cream, lemon juice, and half of the lemon zest. Stir well to combine. e. Bring the mixture to a simmer, then reduce heat to low and let it cook for 2 3 minutes until slightly thickened. f. Remove the pan from heat and stir in the chopped dill, reserving some for garnish. g. To plate, spoon the creamy lemon dill sauce onto individual plates, spreading it out to form a bed. Arrange the cooked seafood on top of the sauce. h. Garnish with remaining lemon zest and fresh dill. Serve immediately.
