  • 12 rice paper rolls, 8 large shrimp, 6 leaves lettuce, 4 cherry tomatoes, 2 cucumber slices, 1 avocado, 1 cup bean sprouts, 1/4 cup fresh cilantro, 1 tablespoon rice vinegar, 1 teaspoon honey, 1 tablespoon olive oil, salt and pepper to taste

Instructions

  1. Prepare the dipping sauce by combining rice vinegar, honey, and olive oil in a small bowl. Season with salt and pepper to taste.
  2. Fill a shallow dish with warm water. Dip one rice paper into the water for a few seconds until softened. Place on a clean surface.
  3. Arrange lettuce, shrimp, cucumber, avocado, bean sprouts, and cilantro in the center of the softened rice paper.
  4. Fold in the sides of the rice paper and roll tightly to enclose the filling. Repeat for all rolls.
  5. Serve immediately with the prepared dipping sauce.
