1/2 small red chili, deseeded and finely chopped (optional)
1 tbsp balsamic vinegar glaze (optional)
Instructions
Preheat a grill or grill pan over medium heat. Lay the bacon on the grill and cook for 3 4 minutes per side, or until crispy. Remove and set aside.
Slice the tomatoes into 1/2 inch thick slices and brush with olive oil. Season with salt and pepper. Place them on the grill and cook for 2 3 minutes per side, or until tender.
Meanwhile, in a bowl, mash the avocados with lemon juice, salt, and pepper to taste.
To serve, divide the mashed avocado between two plates, spreading it out to resemble a bed of "toast." Place grilled tomato slices on top of the avocado and then lay the crispy bacon over the tomatoes.
Finish with a drizzle of balsamic vinegar glaze (if using), fresh cilantro leaves, chopped red onion, and chili (if using).
