  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon sea salt
  • 6 large eggs, separated
  • 1/2 cup pure maple syrup
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped almonds

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8 inch springform pan with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, cocoa powder, and sea salt. Set aside.
  3. In another bowl, beat egg yolks until creamy. Stir in maple syrup, melted coconut oil, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
  5. In a separate large bowl, beat egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter.
  6. Pour the batter into the prepared springform pan and sprinkle with chopped almonds.
  7. Bake for 25 30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before removing from the pan.
