Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and spread the walnuts evenly on the tray. Toast in the oven for 8 10 minutes or until golden brown, then set aside to cool.
In a large bowl, whisk together egg yolks, honey, coconut cream, vanilla extract, and a pinch of sea salt until smooth.
In another bowl, beat the egg whites using an electric mixer on high speed until they form stiff peaks. Gently fold the egg whites into the honey walnut mixture.
Crush the cooled walnuts into coarse pieces and gently fold them into the mixture as well.
Pour the mixture into a loaf pan and smooth the top. Cover with plastic wrap and freeze for at least 6 hours or until firm.
To serve, remove the semifreddo from the freezer about 10 minutes before cutting. Use a sharp knife to slice and place each serving on a dessert plate.
