Ingredients

  • 2 Mahi
  • Mahi fillets (6 oz each) 1 cup riced cauliflower 1 cup fresh pineapple, diced 1/4 cup red onion, finely chopped 1/4 cup cilantro, chopped 2 tbsp lime juice 1 tbsp olive oil Salt and pepper, to taste

Instructions

  1. Season the mahi mahi fillets with salt and pepper on both sides.
  2. Preheat a grill or grill pan to medium high heat.
  3. Grill the mahi mahi for 4 5 minutes per side, or until cooked through. Remove from heat and set aside.
  4. In a bowl, combine pineapple, red onion, cilantro, and lime juice. Season with salt and pepper to taste.
  5. Heat olive oil in a pan over medium heat. Add riced cauliflower and cook for 5 6 minutes, or until tender. Season with salt and pepper.
  6. Serve the grilled mahi mahi on top of the cauliflower rice, and spoon the pineapple salsa on the side. Enjoy!
