Ingredients

  • 1 cup cooked brown rice
  • 1/2 cup sliced zucchini
  • 1/2 cup sliced bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced green onions
  • 1/2 cup marinated and cooked chicken breast, diced
  • 1 tbsp sesame seeds
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tsp honey
  • 1 tbsp coconut oil

Instructions

  1. Cook the brown rice according to package instructions and set aside.
  2. In a large pan, heat the coconut oil over medium heat.
  3. Add the sliced zucchini and bell pepper, sauté for 5 6 minutes or until tender.
  4. In a small bowl, mix together gochujang and honey to create the sauce.
  5. Add the marinated and cooked chicken breast to the pan with vegetables and cook for another 2 3 minutes.
  6. Pour the gochujang sauce over the chicken and vegetables, stir well, and cook for an additional minute.
  7. Assemble the bowl: start with a bed of brown rice, top with chicken and vegetable mixture, garnish with cilantro, green onions, and sesame seeds.
