- 1. 2 cups full
- fat coconut milk 2. 1/3 cup honey 3. 1/4 cup freshly squeezed lime juice 4. Zest of 2 limes 5. 1 tablespoon vanilla extract 6. Pinch of sea salt 7. Fresh berries, for garnish
Instructions
- In a medium saucepan over medium heat, combine coconut milk, honey, lime juice, lime zest, vanilla extract, and a pinch of sea salt. Stir until well combined.
- Bring the mixture to a simmer and cook for about 5 minutes until the honey is dissolved and the flavors have melded together. Remove from heat and allow it to cool slightly.
- Pour the mixture into a shallow, freezer safe dish and place in the freezer. After 45 minutes, use a fork to scrape and break up any ice crystals that may have formed on the surface. Continue this process every 30 minutes for the next 2 hours or until the granita is completely frozen and fluffy.
