Ingredients
1 cup full fat coconut milk 3/4 cup freshly squeezed lemon juice Zest of one large lemon 1/2 cup raw honey or maple syrup 1/4 teaspoon sea salt Optional: a few drops of pure stevia extract for added sweetness, if desired
Instructions
In a medium sized bowl, whisk together the coconut milk, lemon juice, and lemon zest until well combined. Add the honey or maple syrup and sea salt to taste. Adjust sweetness with optional stevia extract if needed. Pour the mixture into popsicle molds, leaving about 1/4 inch of space at the top for expansion. Insert popsicle sticks and freeze until solid, approximately 4 6 hours or overnight.
