  • 1 ½ cups raw almonds 2 cups water ¼ teaspoon sea salt 1 cinnamon stick 3 Medjool dates, pitted 1 cup unsweetened almond milk 1 tablespoon pure vanilla extract Ice cubes and fresh cinnamon sticks for serving

Instructions

  1. In a large bowl, combine the almonds, water, and sea salt. Cover and refrigerate for 8 hours or overnight to soak the almonds.
  2. Once soaked, drain and rinse the almonds. Place them in a blender along with the cinnamon stick and Medjool dates. Blend until smooth, then strain through a fine mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.
  3. Discard the remaining solids and add the almond milk and vanilla extract to the strained almond mixture. Stir well to combine.
  4. Pour the passion infused horchata into glasses filled with ice cubes, garnish with a cinnamon stick, and serve immediately.

Chef’s Insight

For an extra touch, rim each glass with cinnamon sugar before pouring in the horchata.
