1 pound fresh white fish fillet (such as snapper or sea bass), cut into 1/2
inch cubes
1 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed orange juice
1/3 cup thinly sliced red onion
1 large ripe avocado, diced
2 tablespoons chopped cilantro
Salt and pepper to taste
4 green onions, thinly sliced
2 large plantains, peeled and sliced into 1/4
inch thick rounds
Canola oil for frying
1 small red bell pepper, thinly sliced
1 cup cherry tomatoes, halved
Instructions
In a glass or non reactive bowl, combine the fish cubes with lime, lemon, and orange juices. Cover and refrigerate for at least 30 minutes, or until the fish is opaque and just cooked through.
While the fish marinates, prepare the plantain chips. In a deep frying pan, heat about 1 inch of canola oil over medium high heat until it reaches 350°F. Fry the plantain slices in batches until they are golden and crispy on both sides. Remove them from the oil with a slotted spoon and place them on paper towels to drain. Sprinkle them lightly with salt while still warm.
Once the fish is cooked, drain off any excess liquid and mix it with the red onion, avocado, cilantro, and season with salt and pepper to taste. Gently fold in the green onions and set aside.
Assemble the ceviche tower by placing a layer of plantain chips at the bottom of a serving dish. Top with half of the fish mixture, followed by a layer of red bell pepper slices and cherry tomatoes. Repeat the layers until all ingredients are used, ending with a final layer of plantain chips.
Serve immediately, garnishing with additional cilantro leaves if desired.
