Ingredients

  • 2 lbs large shrimp, peeled and deveined
  • 1 cup white vinegar
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 6 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon black peppercorns, freshly ground
  • 4 cups cooked jasmine rice
  • 1/2 cup butter
  • 6 cloves garlic, minced
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Calamansi Aioli (see recipe below)
  • Chopped green onions, for garnish Calamansi Aioli:
  • 1/2 cup mayonnaise
  • 2 tablespoons calamansi juice
  • 1 teaspoon minced garlic
  • Salt and pepper, to taste

Instructions

  1. For the Shrimp Adobo:
  2. In a large pan, combine vinegar, soy sauce, water, half of the garlic, brown sugar, and black pepper. Bring to a boil and cook for 2 minutes.
  3. Add shrimp and cook until pink and curled, about 3 4 minutes. Remove from heat and set aside. For the Garlic Fried Rice:
  4. In a large pan, melt butter over medium heat. Sauté remaining garlic until fragrant.
  5. Add cooked jasmine rice and stir to combine with the garlic. Cook for 5 minutes or until rice is heated through.
  6. Make a well in the center of the rice and pour beaten eggs. Scramble eggs, then mix with rice. Season with salt and pepper. To Serve:
  7. Place a scoop of garlic fried rice on each plate, followed by shrimp adobo. Drizzle calamansi aioli over the dish.
  8. Garnish with chopped green onions and serve immediately.
