Instructions

  2. While the potatoes are cooking, prepare the gluten free chorizo slices in a non stick skillet over medium heat, stirring occasionally until browned and crisp. Set aside.
  3. To poach the eggs, bring a pot of water to a simmer, then reduce the heat to low. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for 2 3 minutes or until the whites are set and yolks are still runny. Remove with a slotted spoon and place on a paper towel lined plate.
  4. To assemble the dish, place two toasted gluten free English muffin halves on each of two plates.
