  2. While the quinoa is cooking, prepare the Spicy Coconut Sauce by combining coconut milk, lime juice, ginger, garlic, curry powder, chili powder, salt, and black pepper in a small bowl. Mix well and set aside.
  3. Once the quinoa is cooked, divide it evenly between two bowls. Top each bowl with diced red bell pepper, cucumber, cherry tomatoes, chickpeas, and chicken breasts. Season with salt and black pepper to taste.
