Instructions

  1. a. Fill a large bowl with warm water. Submerge the rice paper one at a time for about 5 seconds until softened. Remove and place on a clean surface. b. Arrange carrots, cucumber, bell pepper, lettuce, mint leaves, and basil leaves in separate lines or groupings along the center of the rice paper. c. Carefully roll up the rice paper, enclosing the vegetables and herbs inside. Repeat for each roll. d. In a blender, combine avocado, lime juice, coconut milk, honey, salt, and pepper. Blend until smooth, then transfer to a serving bowl. e. Serve rolls with minty avocado sauce on the side, allowing guests to dip as they desire.
