  • 1 cup uncooked quinoa 2 cups water 1 cup fresh pineapple, diced 1 cup fresh mango, diced 1 cup fresh papaya, diced 1/2 cup fresh passion fruit 1/4 cup chopped macadamia nuts 1 avocado, sliced 1/4 cup coconut flakes, toasted 1/4 cup hemp seeds 1 lime, juiced

Instructions

  1. Rinse quinoa under cold water and drain well. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes or until the quinoa is cooked and fluffy. Set aside.
  2. While the quinoa cooks, prepare your fruits by dicing pineapple, mango, and papaya into bite sized pieces. Cut the passion fruit in half and scoop out the pulp. Chop the macadamia nuts and slice the avocado.
  3. Once the quinoa is cooked, fluff it with a fork. Divide the cooked quinoa among 4 bowls. Top each bowl with diced fruits, passion fruit pulp, chopped macadamia nuts, avocado slices, toasted coconut flakes, and hemp seeds. Drizzle with fresh lime juice.
