1 lb boneless, skinless chicken breast 1 head cauliflower, riced 2 cups mixed vegetables (bell peppers, zucchini, and sugar snap peas) 1 cup cherry tomatoes, halved 1/4 cup fresh cilantro, chopped 1/4 cup fresh mint, chopped 2 tbsp ghee or coconut oil 1 lime, juiced Salt and pepper, to taste
Instructions
Season the chicken breasts with salt and pepper. Grill until cooked through, about 6 7 minutes per side. Slice into strips and set aside.
In a large pan, heat ghee or coconut oil over medium heat. Add riced cauliflower and cook for 5 minutes or until tender. Season with salt and pepper.
Add the mixed vegetables to the pan and cook for an additional 4 5 minutes, until slightly softened.
Combine cooked cauliflower rice and vegetables in a bowl. Top with grilled chicken strips, cherry tomatoes, cilantro, and mint. Drizzle with lime juice and enjoy!
