  • 1. 1 cup quinoa, rinsed and drained 2. 2 cups water 3. 1 cup mixed frozen berries (strawberries, blueberries, raspberries) 4. 1 ripe avocado, pitted and diced 5. 1/2 cup coconut yogurt 6. 1/2 cup almonds, toasted and roughly chopped 7. 1/2 cup dried cranberries 8. 1/4 cup fresh cilantro leaves, chopped 9. Zest and juice of 1 lime 10. Salt and pepper, to taste

Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until the quinoa is tender and the water has been absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and set aside.
  2. In a blender or food processor, blend mixed berries until smooth. Set aside.
  3. In a large bowl, combine cooked quinoa, blended berry puree, diced avocado, coconut yogurt, chopped almonds, dried cranberries, and cilantro leaves. Gently stir to mix all the ingredients together.
  4. Sprinkle lime zest and juice over the bowl and season with salt and pepper to taste. Serve immediately.
