Ingredients

  • 1/2 cup cooked sushi rice (or cauliflower rice for a low

  • 4 oz salmon fillet
  • 1/2 avocado, sliced
  • 1/4 cup edamame, shelled and steamed
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber, thinly sliced
  • 1 tbsp pickled ginger
  • 2 tsp sesame seeds, toasted
  • 2 tbsp fresh lemon juice
  • Salt and pepper, to taste

Instructions

  1. a. If using sushi rice, cook according to package instructions otherwise, prepare cauliflower rice in the same manner. Set aside. b. Season the salmon fillet with salt and pepper. In a non stick pan over medium high heat, cook the salmon for 3 4 minutes per side or until desired doneness is reached. Remove from heat and let rest. c. To assemble the bowl, layer the cooked rice or cauliflower rice at the base, followed by sliced avocado, steamed edamame, shredded carrots, thinly sliced cucumber, pickled ginger, and toasted sesame seeds. d. Drizzle with fresh lemon juice and enjoy!
