In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water has been absorbed. Remove from heat and let stand for 5 minutes. Fluff with a fork and set aside.
In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic and sauté until softened, about 3 4 minutes.
Add the cherry tomatoes to the skillet and cook for an additional 3 4 minutes, until they begin to soften.
Stir in the cooked quinoa and spinach, and cook until the spinach has wilted, about 2 minutes. Season with salt and pepper to taste.
Divide the quinoa mixture among four bowls. Top each bowl with a few avocado slices, a sprinkle of Kalamata olives, and a sprinkle of crumbled feta cheese (if using).
