1. 2 lbs grass
fed beef sirloin, cut into 1
inch cubes 2. 3 tbsp olive oil 3. 1 red onion, finely chopped 4. 2 cloves garlic, minced 5. 1/2 cup fresh cilantro, chopped 6. Salt and pepper to taste 7. 1 large ripe mango, diced 8. 1 small red bell pepper, finely chopped 9. 1 jalapeño, seeded and finely chopped 10. 1/4 cup fresh lime juice 11. 1 avocado, sliced 12. 4 large eggs 13. 1 tbsp coconut oil
Instructions
Season the beef cubes with salt and pepper, then sear them in a hot skillet with 2 tablespoons of olive oil until browned on all sides. Remove from heat and set aside.
In the same skillet, add 1 tablespoon of olive oil, sauté the onion and garlic until softened and fragrant.
Add the seared beef back to the pan with the cooked onions and garlic. Stir in cilantro and cook for another 2 minutes. Remove from heat and set aside.
In a separate bowl, combine mango, bell pepper, jalapeño, and lime juice to make the salsa. Let it rest for at least 10 minutes to let flavors meld.
Heat coconut oil in a non stick pan over medium heat. Fry the eggs to your preferred doneness.
To plate, divide the beef hash among four plates and top each with a fried egg. Serve the mango salsa on the side. Garnish with avocado slices and a sprig of cilantro.
