free smoked sausage, sliced 1 medium bell pepper, diced 1 small onion, chopped 4 large eggs 1 cup shredded cheddar cheese 2 tbsp fresh parsley, chopped Salt and black pepper, to taste 2 tbsp olive oil
Instructions
Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, sautéing until softened, about 5 minutes.
Add the smoked sausage to the skillet and cook for another 5 minutes, or until browned and heated through.
Season with salt and black pepper, to taste.
Create four small wells in the sausage mixture and crack an egg into each one. Cover and cook for 4 5 minutes, or until the eggs are set.
Sprinkle the shredded cheddar cheese over the top and cover the skillet again to allow the cheese to melt.
Remove from heat and garnish with chopped fresh parsley before serving.
