  2. Add the smoked sausage to the skillet and cook for another 5 minutes, or until browned and heated through.
  3. Season with salt and black pepper, to taste.
  4. Create four small wells in the sausage mixture and crack an egg into each one. Cover and cook for 4 5 minutes, or until the eggs are set.
  5. Sprinkle the shredded cheddar cheese over the top and cover the skillet again to allow the cheese to melt.
  6. Remove from heat and garnish with chopped fresh parsley before serving.
