  • 4 large bell peppers (2 red, 2 yellow) 1 lb large shrimp, peeled and deveined 1 ripe avocado, diced 2 tbsp Piri Piri sauce 1/2 cup crumbled feta cheese 1/4 cup chopped fresh cilantro 1 lime, juiced Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Place them in a baking dish and bake for 12 minutes or until slightly tender. Set aside to cool.
  3. In a bowl, mix shrimp with Piri Piri sauce, salt, and pepper. Cook shrimp in a skillet over medium heat for 3 4 minutes or until pink. Remove from heat and let cool.
  4. Once the bell peppers have cooled, stuff them with shrimp, avocado, feta cheese, cilantro, and lime juice. Season with salt and pepper to taste.
  5. Broil the stuffed peppers in the oven for 5 minutes or until the cheese is melted and bubbly. Serve immediately.
