  • 1 cup pitted dates, chopped 1 1/2 cups water 1 tsp bicarbonate of soda 2 cups all
  • purpose flour 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp salt 1 cup brown sugar, packed 1 cup unsalted butter, softened 2 large eggs 3/4 cup milk For the caramel sauce: 1 cup granulated sugar 1/2 cup heavy cream 1/4 cup unsalted butter 1 tsp vanilla extract For the whipped cream: 1 cup heavy cream 2 tbsp powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8 inch round cake pan. In a small saucepan, combine dates, water, and bicarbonate of soda. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and set aside to cool. In a large bowl, whisk together flour, baking powder, cinnamon, ginger, and salt. Set aside. In another bowl, cream the brown sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in cooled date mixture. Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined. Pour batter into prepared cake pan and bake for 35 40 minutes, or until a toothpick inserted into the center comes out clean. While the pudding bakes, prepare the caramel sauce by combining sugar, cream, butter, and vanilla extract in a small saucepan. Heat over medium heat, stirring constantly, until the sugar is dissolved and the sauce is smooth. Set aside to cool slightly. Prepare the whipped cream by whisking together heavy cream and powdered sugar until stiff peaks form. Once the pudding has cooled, slice and serve with a generous drizzle of caramel sauce and a dollop of whipped cream.
