  • 3 cups Cooked Garlic Fried Rice
  • 6 Eggs, large
  • Vegetable oil, for frying
  • Salt and pepper, to taste

Instructions

  1. In a non stick pan, heat 2 tablespoons of vegetable oil over medium heat. Add the tocino slices in a single layer and cook for 3 4 minutes on each side until crispy and golden brown. Remove from pan and set aside.
  2. In another non stick pan, prepare your garlic fried rice by heating 1 tablespoon of vegetable oil and sautéing 2 minced garlic cloves until fragrant. Add 3 cups of cooked rice, season with salt and pepper to taste, and stir well. Cook for 3 4 minutes or until the rice is heated through. Set aside.
  3. To cook sunny side up eggs, heat a small non stick pan with 1 tablespoon of vegetable oil over low heat. Crack an egg into a bowl, gently slide it into the pan, and cover with a lid. Cook for 3 4 minutes until the whites are set but yolks remain runny. Remove from pan and season with salt and pepper to taste. Repeat with the remaining eggs.
