  • 6 (6 oz) salmon medallions, skin on
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 cups assorted Nordic root vegetables (carrots, parsnips, rutabaga), peeled and chopped
  • 2 tbsp unsalted butter
  • Freshly ground black pepper, to taste Lemon Dill Sauce:
  • 1/2 cup mayonnaise
  • 3 tbsp fresh lemon juice
  • 1 tsp grated lemon zest
  • 2 tbsp chopped fresh dill
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Season salmon medallions with salt and pepper. In a large ovenproof skillet, heat olive oil over medium high heat. Add salmon, skin side down, and cook for 3 minutes or until skin is golden brown and easily releases from the pan. Flip salmon and transfer skillet to the preheated oven. Bake for 7 10 minutes or until salmon flakes easily with a fork.
  3. In a separate roasting pan, toss chopped Nordic root vegetables with butter and season with salt and pepper. Roast in the oven for 25 30 minutes or until tender and golden brown.
  4. For the Lemon Dill Sauce, whisk together mayonnaise, lemon juice, lemon zest, dill, salt, and pepper in a small bowl. Cover and refrigerate until ready to serve.
