4 fresh corn on the cob, husked and silks removed
1 cup crumbled cotija cheese
2 tbsp unsalted butter, melted
1/4 tsp ground cayenne pepper (adjust to taste)
1/4 cup mayonnaise
2 tbsp fresh lime juice
1/4 cup chopped fresh cilantro
Salt and pepper, to taste
Instructions
Preheat the grill or grill pan to medium high heat.
Brush corn with melted butter, then season with salt, pepper, and cayenne pepper to taste. Grill corn for 8 10 minutes, turning occasionally, until tender and slightly charred.
In a small bowl, mix together mayonnaise, lime juice, and half of the chopped cilantro. Season with salt and pepper to taste.
Remove corn from the grill and immediately brush with the mayonnaise mixture, then sprinkle with crumbled cotija cheese.
Garnish with remaining cilantro and serve immediately.
