Instructions

  1. Begin by preparing the cashew cheese spread. Soak 1 cup of raw cashews in hot water for 30 minutes, then drain and blend with 2 tbsp of nutritional yeast, 1/4 cup of lemon juice, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, 1/4 tsp of salt, and 1/4 cup of water until smooth. Set aside.
  2. Toast the sourdough bread slices in a toaster or oven for 3 5 minutes, until golden brown.
  3. Spread a generous layer of cashew cheese spread on each slice of toast.
  4. Layer mashed avocado on two of the toast slices.
  5. Arrange three slices of tempeh bacon on top of the avocado covered toast.
  6. Place tomato slices over the tempeh bacon.
  7. Top with fresh spinach leaves and a sprinkle of your choice of mixed herbs for garnish.
  8. Season with salt and pepper to taste, if desired.
