Instructions

  1. Prepare the caramelized pineapple syrup by combining pineapple chunks, sugar, water, lime zest, and a pinch of salt in a saucepan over medium heat. Cook until the pineapples are softened and the mixture has thickened into a syrup. Strain out the pineapple chunks, reserving both the syrup and chunks for later use.
  2. In a shallow dish, mix coarse sugar or sanding sugar with sea salt to create a rimming mixture. Run a lime wedge around the rim of each glass and dip them into the rimming mixture, twisting gently to coat the edges evenly. Set aside.
  3. In a cocktail shaker filled with ice, combine tequila blanco, mezcal joven, fresh lime juice, triple sec or Cointreau, pineapple juice, and 2 tbsp of the prepared caramelized pineapple syrup. Shake vigorously until well chilled and combined.
