Instructions

  1. In a medium bowl, mix together the chicken pieces with gluten free soy sauce, lime juice, grated ginger, minced garlic, coriander, cumin, turmeric, and crushed red pepper flakes (if using). Marinate for at least 30 minutes or up to overnight.
  2. Preheat your grill or broiler to medium high heat. Thread the marinated chicken onto gluten free skewers, discarding any excess marinade.
  3. Grill or broil the chicken satay for about 5 6 minutes per side, or until cooked through and slightly charred. Remove from heat and set aside.
  4. In a small bowl, whisk together peanut butter, water, lime juice, grated ginger, gluten free soy sauce, honey or maple syrup to make the peanut sauce. Adjust consistency with more water if needed.
  5. For the cucumber salad, mix together thinly sliced cucumber and red onion, rice vinegar, sugar or honey, and salt. Let sit for at least 10 minutes for flavors to meld.
