  • 4 whole chicken legs (drumsticks and thighs) 1 large head of cauliflower 4 tablespoons olive oil, divided 1/2 cup fresh lemon juice 1/4 cup chopped fresh parsley 1/4 cup chopped fresh basil 1 teaspoon dried rosemary Salt and pepper to taste 6 cloves garlic, minced 3 tablespoons ghee or grass

  2. In a large mixing bowl, combine the lemon juice, half of the olive oil, parsley, basil, rosemary, salt, and pepper. Mix well.
  3. Place the chicken legs in a shallow baking dish and pour the lemon herb marinade over them. Massage the marinade into the chicken for even coverage. Allow to marinate for 15 20 minutes.
  4. In the meantime, prepare the mashed cauliflower by breaking the cauliflower into florets and steaming until tender.
  5. Drain the cauliflower and place it in a large mixing bowl. Add the ghee or butter, remaining olive oil, and garlic. Use a potato masher to combine and mash until smooth. Season with salt and pepper to taste. Set aside.
  6. After marinating, transfer the chicken legs to a lined baking sheet and bake for 25 30 minutes, or until cooked through and golden brown.
