Ingredients
- 8 large eggs
- 4 rashers of nitrate
- free bacon
- 1/2 cup cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1/2 cup fresh spinach leaves, chopped
- 1 cup mushrooms, sliced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat a large non stick skillet over medium heat.
- Add bacon to the skillet and cook until crispy, turning occasionally. Remove from skillet and let cool on paper towels. Crumble when cooled.
- In the same skillet, add olive oil, onions, and mushrooms, cooking until softened and fragrant.
- Add cherry tomatoes to the skillet, season with salt and pepper, and cook for 2 3 minutes.
- In a separate pan, fry eggs to your desired preference.
- On individual plates, layer spinach leaves, sautéed vegetables, crumbled bacon, and top with the perfectly cooked egg.
- Season with additional salt and pepper if desired, and serve immediately.
