Ingredients

- on chicken thighs 1 can (355ml) beer (preferably a lager or pale ale) 2 tbsp olive oil 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1/2 tsp ground cumin 1/2 tsp dried oregano Salt and black pepper, to taste
Instructions
- Open the beer can and pour half of it into a shallow dish or bowl reserve the rest for later use.
- In the dish, combine the paprika, garlic powder, onion powder, ground cumin, dried oregano, salt, and black pepper to create your seasoning mix.
- Rub the chicken thighs with olive oil and then coat them evenly with the seasoning mix. Let them marinate for 30 minutes in the refrigerator.
- Preheat your grill or smoker to medium high heat (around 350°F/175°C). Place an aluminum foil lined disposable pan on the grates, and then place the beer can in it.
- Carefully insert the beer can into one of the chicken thighs, balancing it upright with the opened end facing downward.
- Grill or smoke the chicken for 30 40 minutes or until fully cooked through (internal temperature should reach at least 165°F/74°C). Rotate and flip the chicken occasionally for even cooking.
Chef’s Insight
Don't forget to save some of the juice that collects at the bottom of the disposable pan, as it makes an excellent dipping sauce for your meal.
