  • 2 lbs beef brisket, cut into 1

  • 3 cups beef broth
  • 1 cup barbecue sauce

  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 4 large brioche buns, split
  • 2 cups thinly sliced yellow onions
  • 2 tbsp unsalted butter
  • 8 slices cheddar cheese (optional)
  • Pickles and coleslaw for serving

Instructions

  1. In a slow cooker, combine brisket, beef broth, barbecue sauce, apple cider vinegar, brown sugar, paprika, garlic powder, onion powder, ground black pepper, salt, and cayenne pepper. Cook on low heat for 8 hours or high heat for 4 hours.
  2. In a large skillet over medium high heat, melt butter and sauté onions until golden brown and slightly crispy, about 5 minutes. Remove from pan and set aside.
  3. Heat grill to medium high heat. Place brioche buns cut side down on the grill and cook until charred, about 1 2 minutes.
  4. Thread cooked brisket onto skewers and grill for 2 3 minutes per side or until heated through. Remove from grill and discard skewers.
  5. Assemble burgers by placing a layer of sautéed onions, brisket, cheese (if using), and pickles on the bottom half of each bun. Top with coleslaw and the top half of the bun. Serve immediately.
